National Shrimp Day

May 9, 2012

May 10th is National Shrimp Day, so we're taking the time to give you a few "shrimp facts" to help you look like the Shrimp Master to all of your friends!

A session in shrimp with Chef Andrew Wilkinson:

1.What’s the difference between a shrimp and prawn?Buffalo Shrimp at Skipjack's Seafood Emporium

The difference is biological. They are different species and their differences come from shell structure and internal organs. Taste differs depending on where they're from and what they're feeding habits are. Many seem to think the prawn has a sweeter taste, and the shrimp a more iodine “earthy” flavor.

2.How many legs do shrimp have?
Ten legs. Five sets of two. Ends up costing their parents a fortune buying pants for the family.

3.What is the difference between farm-raised and wild shrimp?
The biggest difference is flavor. Wild shrimp take on the flavor of their environment. A more pronounced earthy iodine flavor.  Same for farmed, they are a product of their environment, although in a very controlled atmosphere. They are able to control the flavor, the size and genetic make-up. The farming of shrimp has enabled all people around the world the chance to enjoy shrimp at a reasonable price. Like with most products, there are good farms and not-so-good farms. Responsible aquaculture is more the norm these days as the global attitude is based upon food safety.

4.Can you tell me a little about the different sizes of shrimp? 10 count vs 30 count
