Chocolate Banana & Peanut Butter Cupcake Recipe

Chocolate Banana & Peanut Butter Cupcake Recipe
Makes 18 cupcakes

Ingredients:

  • ½ cup butter                                           
  • 1 cup sugar                                             
  • 2 eggs                                                       
  • ½ cup mashed bananas (3 total)           
  • ¼ cup milk                                               
  • ½ cup peanut butter                              
  • 2 cups cake flour                                    
  • 1 ½ tsp baking powder                      
  • ¼ tsp baking soda                                  
  • 1/8 tsp salt                                             
  • ½ cup Hershey’s cocoa powder    

Cooking Directions:

In a stand mixer add butter and mix for 5 minutes. Add the sugar and mix until light and fluffy. Then add eggs, one at a time, beating well after each addition. Combine the bananas, then add the dry ingredients. Gradually add to cream mixture and add milk. Pour into greased tins and bake at 375 degrees Fahrenheit for 20-22 minutes. When a toothpick inserted in the center comes out clean, it’s done!

Frosting Garnish:

  • 2 cups powdered sugar                               
  • ½ cup creamy peanut butter                      
  • 3 tbsp milk                                                     
  • ½ cup chocolate Hershey’s cocoa powder         
  • ½ cup butter                                                 
  • Chocolate chips (sprinkled on top)           

Cooking Directions:

In a stand mixer, combine cream butter and mix until light and fluffy. Add powdered sugar while beating then add the peanut butter, milk and cocoa powder. Beating until all are mixed together well. Once cupcakes are cooled, dress each with the frosting and sprinkle chocolate chips on top!
