CSA Recipe Series: Asian Lemongrass Soup

When the weather turns cooler, or if you just need a bowl of comfort, grab your vegetable share from Maya Papaya CSA, and create a healthy & hearty soup! This week’s recipe is for an Asian Lemongrass Soup that’s easy to make and perfect for a large crowd (not to mention it never disappoints). I’ts important not to skimp on the lemongrass because it provides the perfect balance of flavors. You can find lemongrass in most asian markets.

Recipe: Asian Lemongrass Soup 1 quart chicken broth

  • 1 quart water
  • 6 fresh lemongrass stalks, chopped
  • 3 large slices of ginger root
  • 6 scallions, chopped into inch pieces
  • 1 bunch fresh cilantro, roughly chopped (make sure you use the ends, very flavorful)
  • 1 onion, roughly chopped
  • 1/2 cup fresh lime juice
  • 1/2 cup Thai fish sauce
  • 2 pods of star anise
  • optional: 1/2 cup of coconut milk

Directions:

Combine all ingredients and bring to a boil. Simmer for 40 minutes. Strain and cool before storing. Before serving garnish with any type of meat or vegetable. Here are some of our favorites (you can use as many as you like!): Pak Choi, enoki mushrooms, nappa cabbage, scallions
